Ingredients
  

  • 1 package store-bought tart shells preferably mini size
  • 8 oz Brie cheese cut into small cubes
  • 1 cup fresh cranberries or frozen cranberries, thawed
  • 2 tbsp sugar or honey/maple syrup
  • 1/4 cup water for cooking cranberries
  • optional fresh thyme or herbs for garnish

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper. Arrange the tart shells on the sheet, ensuring they’re evenly spaced.
  2. Place the tart shells in the oven and bake for about 5 minutes until they just start to turn golden and crisp up slightly. This helps the shells hold their shape during filling.
  3. Meanwhile, cut the Brie cheese into small cubes or slices. Set aside for easy layering later.
  4. In a small saucepan, combine cranberries, sugar, water, and a pinch of salt. Bring to a gentle simmer over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens slightly, about 5 minutes. The sauce should be glossy and bubbling.
  5. Remove the tart shells from the oven and carefully place a few pieces of Brie into the center of each shell. The shells should be warm and slightly crispy.
  6. Using a small spoon, dollop a spoonful of the warm cranberry sauce on top of the Brie in each tart shell. The cranberries will add a vibrant color and a tart burst of flavor.
  7. Return the assembled bites to the oven and bake for an additional 10-12 minutes, until the Brie is melted and bubbly and the tart shells are golden brown around the edges.
  8. Remove from the oven and let the bites rest for 2 minutes. This allows the cheese to set slightly and makes them easier to serve.
  9. If desired, garnish with fresh thyme or a sprinkle of flaky sea salt for extra flavor. Serve warm or at room temperature for the best experience.

Notes

For a gluten-free version, use almond flour tart shells. You can also add a drizzle of honey or balsamic vinegar before serving for extra depth.
